How to do it:

1. Melt unsalted butter + salt in a light-colored saucepan over medium heat.

2. Swirl occasionally as it foams, then clears, then develops golden-brown specks at the bottom.

3. Once it smells deeply nutty and turns amber-brown, immediately remove from heat.

4. Strain through a fine sieve into a bowl and let cool completely to room temperature. Hot butter will cook the egg whites and ruin your batter!

Making the Batter – Just 4 Easy Steps

1. Mix wet ingredients: In a bowl, whisk egg whites + sugar until sugar dissolves (no foam needed).

3. Incorporate browned butter: Pour the cooled butter in three additions, mixing well after each.

4. Final texture: Smooth, glossy, and pourable—like thick cream.

  For best results, cover and chill batter 30 minutes (optional but enhances flavor).


Baking & Unmolding

1. Transfer batter to a piping bag and fill each cavity of the CHEFMADE WK9838 mold about ¾ full.

2. Press a few sliced almonds on top for crunch and charm.

3. Bake in the center rack of a preheated oven at 410°F for 10–12 minutes, until golden and slightly pulling away from the edges.

4. → Ovens vary! Start checking at 10 minutes.

5. Unmold immediately while warm onto a cooling rack to keep the bottoms crisp.
