📝 Recipe (Makes 12)

 

For the batter:

 

  • Whole egg (lightly beaten) … 90g

     

  • Caster sugar … 60g

     

  • Cake flour (or low-protein flour) … 65g

     

  • Baking powder … 2.5g

     

  • Fresh lemon … 1 (zest + juice)

     

  • Unsalted butter, melted & cooled … 70g

  • White chocolate … as needed

👩🍳 Step-by-Step Instructions

 

1️⃣ Prep Work

 

  • Wash the lemon thoroughly. Use a fine grater to zest only the yellow part (avoid the bitter white pith).

     

  • Juice the lemon and strain to remove pulp. Set both aside.

     

  • Melt the butter gently (double boiler or microwave), then let it cool to room temperature.

     

2️⃣ Make the Batter
